Beef Pasanda

We pound our beef thin before marinating it in yogurt and spices, then cook it gently in a pale, creamy sauce made with ground almonds, fresh cream, and aromatic whole spices. It's a Kashmiri dish that's all about subtlety — the meat practically melts on your tongue, and the sauce is fragrant with green cardamom and white pepper.
