Prepared With A Sauce Of Onions Tomatoes Methi Leaves

We cook onions until they're deep golden and jammy, then add tomatoes that break down into a thick, concentrated base. Fresh methi leaves - with their slightly bitter, maple-like aroma - are stirred through at the end, wilting into the rich sauce. The vegetables are coated rather than swimming, each piece glistening with the intensely flavoured gravy that has been reduced to perfection.
