Our Bombay-style lamb follows a recipe our head chef learned in the bustling markets of Mumbai twenty years ago. We marinate tender lamb overnight in yogurt and spices, then slow-braise it with tomatoes and onions until the sauce becomes thick and glossy. Each piece of lamb absorbs the complex flavours of cardamom, cinnamon, and bay leaves.
